Sausage & Kale Potato Soup

Tweaks: I actually followed this recipe without forgetting anything. Strange concept for me. WAIT… I used a little more garlic than called for, because garlic is my best friend. I also added the kale as the last step to avoid any sogginess (it wasn’t soggy and gross AT ALL so this may have been unnecessary). I also used almond milk (yeah… wow. 3 tweaks) instead of soy because I dislike soy like it is my job to dislike soy milk.

Review: This was an awesome recipe. I made it for a soup exchange party and I still have friends telling me how much they enjoyed the soup (a week later). I used good old-fashion, pre-packaged Johnsonville (I am in Wisconsin, after all) kielbasa. I tasted the soup after each step to make sure it was seasoned to taste. I will definitely make this again. My favorite part about it was that the prep time was just the cutting and measuring, the sausage was pre-cooked. So maybe if I was a faster cutter, this would be a quick dinner to make.
